How to Harvest & Use It
These potatoes are different from those that might be left in the ground by mistake. They can tolerate severe frost because they tend to dry down during winter, which prevents their cell walls from bursting if they freeze. They have been selectively bred to survive outdoors through the winter.
In the first year, you will be able to start harvesting new potatoes in early summer. Wait until the vines die down to dig up your main harvests. Make sure to leave a few potatoes in the ground to continue to grow for you. We like to replant our biggest tubers.
